“I love a good cocktail but given that I don’t get out quite as much as I used to (hi, kids!) I decided to write a book to help re-boot at-home cocktail repertoires. Homemade Cocktails is stuffed with simple recipes for homemade infusions, syrups and shrubs along with a selection of the best classic cocktails and plenty of new ones too. Here are a few of my favourites…“
200g fresh raspberries
Rinse the raspberries and pop them into a clean jar. Pour in the gin. Seal the jar, give it a gentle shake and leave for a week in a cool, dark place. If you remember, give it a gentle shake every day, just to mix up the ingredients.
Strain the liquid into a bowl, through a fine muslin cloth if possible, to get any bits out. Otherwise a sieve will do. Then pour back into the jar or into a clean bottle. Seal and store in the fridge.
Glorious in a Raspberry Martini or serve it simply with plenty of ice, top it up with tonic water and add a twist of lemon peel and/or a raspberry to garnish.
120ml Raspberry Gin (see above)
750ml (1 bottle) prosecco
Your homemade raspberry gin is the best secret ingredient for one of the most delicious (and unbelievably easy) sparkling wine party cocktails. Prosecco is good here but use whatever sparkling wine you have to hand. One bottle of prosecco will give you six servings.
Pour 20ml of raspberry gin into each chilled flute or coupe and top up with chilled prosecco. Garnish each with a fresh raspberry. If it’s New Year’s Eve (or you’re just naff like me) add a sprinkle of edible glitter to each one.
