Rebecca’s Festive Rockie Roads

As a festive alternative to Christmas cake or mince pies my daughters have discovered the guilty, delicious gooey pleasure of Rockie Road. They are as easy to make as they are to eat and I wanted to share their recipe below

A little guilty pleasure of mine is to enjoy one of these after an evening run, in a warm bath with a glass of wine, my Balance Me candle burning and my Radiance Face Mask on! The perfect end to a busy day. It’s all about balance (and chocolate)!

Ingredients

  • 200g Good quality chocolate (we use Green & Blacks)
  • 2-3 Tablespoons honey or syrup
  • 200g Digestive biscuits
  • 100g Mini Marshmallows
  • 135g Butter

Method

Break up the biscuits with a rolling pin (I put the biscuits in a freezer bag– make sure the bag is sealed!)  Melt the chocolate over the hob in a bain marie and add the butter. Mix well. Take the bowl off the heat and add the biscuits. Once cooled a little, add the marshmallows and mix well. Pop the mixture into a greased and baking-paper lined tin and refrigerate for a few hours or overnight. Try not to take a few slices every time you open the fridge! In the morning, cut into squares and dust with icing sugar for an extra festive touch.
